HOLYOKE — Electric Café is the newest restaurant to be located in the Mill 1 building at Open Square and owner Peg Boxold believes it will have the success that has eluded other eateries in this location.

Boxold spoke to Reminder Publications during the restaurant's grand opening last week. Boxhold is no stranger to the business, as she owns Elegant Affairs and operates the bar for the Carriage House at Forest Park, the food concession at Franconia Golf Course and a corporate cafeteria at Brooks Brothers in Connecticut.

"We're going to stick around," she said.

The soft opening for the business was June 20 and barista Natasha Reno said the reaction has been "very positive."

Boxhold was attracted to the restaurant space because Elegant Affairs has frequently catered events conducted in the Mill 1 building, she explained.

Boxhold said the café will features special every week and will have fresh baked good as well as use local produce. The coffee served by the restaurant is roasted in Hadley.

The menu includes breakfast items such as crème brûlée French toast, a Mediterranean breakfast wrap, salads, sandwiches and burgers. One of the features of the menu is a "build your own" sandwich option.

The new restaurant created two full-time jobs as well as three part-time positions that Boxhold hopes will eventually become full-time.

Electric Café is open Monday through Friday from 7 a.m. to 2:30 p.m. and on Saturday from 10 a.m. to 2 p.m.
