Florence brewery officially opens long-awaited taproom

NORTHAMPTON – A brewery in the heart of Florence on 36 Main St. officially achieved an important milestone for their business as we make headway into the new year.

Drawing Board Brewing Co., spearheaded by the husband-and-wife team of Corey and Antonia Lynch, officially opened their much-anticipated taproom on Jan. 7 with a grand opening ceremony and celebration. Since officially opening their business on the former Brew Practitioners site back in 2021, the duo has produced and sold products in cans while occasionally hosting pouring events on the back patio, and they are now ready to officially open the inside to the public with an opening tap list that includes a pale ale, a grisette, a Czech dark, an IPA, an ESP and an American Stout.

“It’s a pretty good representation across the spectrum,” said Corey Lynch in an interview with Reminder Publishing. “It’s a pretty unique style that a lot of breweries around here don’t have, which is what we really want to dial into.”

When the duo first started, almost 99 percent of their sales were through cans straight out their door at 36 Main St, but Lynch said that local establishments like the Marigold Theater and The Dirty Truth have carried their beer in the past.

“We’ve also gotten out to a couple of festivals and served at Taste of Northampton this year,” Lynch said. “We were also a server at the Happy Valley Half Marathon.”

Lynch told Reminder Publishing that a taproom was always part of their plans but because they opened during the tail end of the coronavirus pandemic, the owners knew they were not in any rush to get the room open.

“We didn’t have to pivot like a lot of the other breweries and restaurants did,” said Lynch. “We were able to go in planning for the fact that we were going to have lower sales than we expected, selling mostly to-go products, and just have that taproom on the horizon to know there was a light at the end of the tunnel.”

Now, with the room open, Lynch said the goal is to now host more local entertainment to draw a crowd within the next few months, whether it be trivia, music or some other forms of entertainment.

“We’re open to anyone throwing out any ideas for who can come to perform,” said Lynch. “They can definitely reach out to us.”

In its first year of production, Drawing Board introduced 13 different beer styles, which is a lot of beer for a brewery of its size. With the taproom now open, Lynch said the brewery hopes to introduce categories and styles that have not been explored before.
