Sunny Side Up experiences early success in West Side

WEST SPRINGFIELD – Sunny Side Up, a breakfast and lunch spot located at 46 Morgan Rd., opened their doors in late June. Throughout the summer months, the restaurant has already seen many successes.

Barbara Lewko, owner of  Sunny Side Up, said in offering both dine-in and take-out, Sunny Side Up draws large crowds on the weekends, whereas the weekdays are calmer. Seating is first come, first served.

To kick off the morning right, Sunny Side Up offers breakfast all day with options such as eggs benedict, omelettes, breakfast sandwiches, pancakes, french toast, and more. Lunch options include kielbasa and reuben sandwiches, a tuna melt, salads, build your own sandwiches, and so on.

In addition to these menu items, Lewko said they offer Polish specials. The specials are posted on the overhead board when people walk into the restaurant, however, they’re not printed on the menu as they frequently change. Some of the Polish specials have included a cabbage pierogi, Polish bigos, and the most popular: potato pancakes.

Over the past month and a half, Lewko said she has been observing what people buy and don’t buy, and will adjust the menu accordingly. Within the next few weeks, she’s hoping to have the menu finalized.

Lewko said she originally opened this restaurant because she wanted to be her own boss. In addition, she loves breakfast and going out to eat in a “clean” environment where “fresh” food is offered.

Sunny Side Up works to ensure that their facility is as clean as possible. Lewko said they sanitize menus and tables regularly. The restaurant is open to full capacity.

Currently, Lewko has about four employees that work for her. She added that she likes the West Springfield area and is familiar with it as she resides in Springfield. As this restaurant is only a start-up, she said that depending on how everything goes, perhaps one day they will move to a larger location.

“It’s cozy in here – [the atmosphere] makes it welcoming,” said Lewko.

Sunny Side Up’s hours of operation are Tuesday through Sunday, 7 a.m. to 2:30 p.m. They are closed on Monday.
