Knights of Columbus hosting New Year’s Eve celebration

CHICOPEE – To kick off the new year on the right note, the Knights of Columbus 404 Council in Chicopee are hosting a New Year’s Eve celebration at their Castle of Knights location on 1597 Memorial Dr.

Current District Deputy and Past Grand Knight Don Darcy spoke to Reminder Publishing about the event and Knights’ ongoing efforts to resume operations amidst the pandemic. The organizations first in-person event since the pandemic – the Addams Family Halloween Buffet – was viewed as a solid step towards a return to form for Knights, according to Darcy. “We did have a decent showing. The kids also had a great time,” said Darcy.

For the New Year’s event, the district deputy discussed a few changes with their traditioned gathering. Instead of serving a plated meal, Darcy said the event will have a variety of different food options via food stations. “We thought to change it up a little bit, we are going to have stations,” said Darcy. Each table will feature a Mediterranean charcuterie board before enjoying a chopped salad and minestrone soup for appetizers, according to Darcy.

The main courses will include prime rib, salmon en croûte, pasta with gourmet sauces, herb roasted vegetables and a customizable potato station, while the dessert will feature crème brule, macaroons, tiramisu, chocolate delights, teas and coffee. Alongside the food options, the event will also feature a 50/50 cash raffle and music from DJ Stephan.

Denise “Dee” Darcey also spoke to Reminder Publishing about the event’s accommodating space. With the location boasting two different dance floors, Dee said the event will have a range of options for attendees to participate at their own speed.

“We have two very large dance floors. One side will be up by the DJ, while the other dance floor is by our fireplace side. We can cater to people who want to be up front and get into the festivities, or we can cater to the older crowd who prefers something a little cozier on the fireplace side,” said Dee.

Tickets for the Knights’ New Year’s Eve event are $89, and will be sold Monday through Thursday from 6 to 8 p.m. The deadline to purchase tickets is Dec. 27.
Looking ahead to next year, Don Darcy said the Knights are making preparations for their Valentine’s Day Sweetheart Dance and Fridge Night, which will feature a unique and old-fashioned menu when it occurs around late March.
