HOLYOKE — Authentic Mexican Street food restaurant Macho Taco has continued expansion in the region after adding a new location and iteration of their business called El Burrito, that was officially opened inside the Holyoke Mall Café Square on Oct. 31.
With its original location still in Agawam and a second location inside MGM Springfield, Macho Taco’s new venture looks to expand their food services and provide a more convenient option than their traditional restaurant setting. El Burrito by Macho Taco now joins the mall’s food court and adds a new Mexican experience to the options available.
Macho Taco owner Jose Diaz told Reminder Publishing the new El Burrito operation is something he has been interested in for a while. The new location looks to bring its south of the boarder flavors in a convenient package for shoppers on the go.
“We’ve been looking at starting a different concept as well, so we wanted to do a burrito line style concept that’s a little higher paced because in our two other restaurants it takes a little bit longer, but here it’s a little more fast paced where people can order on the go,” Diaz said.
Diaz was joined by his family, members of the Holyoke Mall and Greater Holyoke Chamber of Commerce Executive Director Jordan Hart for a ribbon cutting ceremony for El Burrito’s opening. Hart thanked Diaz for choosing Holyoke and was excited for the addition to the city.
“Featuring many menu favorites, El Burrito is a new concept geared towards the center’s on-the-move shopper,” said Holyoke Mall Marketing Director Ruth Hastings. “We are excited to showcase Jose’s south-of-the-border flavors and local favorites with our community.”
Diaz also shared excitement about adding a new location in the Paper City and said it was a great partnership for the new Macho Taco venture.
“We’ve been discussing moving to Holyoke since before the pandemic. We wanted to spread out more in Western Mass.,” Diaz explained of the expansion. “We thought Holyoke was a good place to come start that initial concept, a smaller space with a high volume of people.”
Diaz said he likes the new concept in El Burrito as it was easier to get started and would be easier to replicate than another restaurant like Macho Taco because there is less staff required and is a more convenient food service compared to the dine in experience found at the Macho Taco locations.
Diaz added he will continue to focus on the quality of his business and added he hopes to bring more El Burrito locations in the region in the future.
El Burrito’s menu will feature highlights such as Elote fries, the California burrito and nachos, as well as several other Mexican options. Macho Taco earned the No. three spot on Yelp’s “Highest-rated Restaurants for Tacos in the Springfield Area” list in 2022 and 2023 and was rated No. three for “Best Mexican Restaurants in Springfield Area,” in 2022, according to Trip Advisor.
